The Center for Disease Control has a set up a website that describes prevention methods for schools.  There is a myriad of educational information here, posters, hand washing information, flu vaccine status, cough into your elbow etc.

Also, some schools have set up alcohol based hand sanitizers at a location each student will be standing at each day, in the lunch line.  Link to CDC fact sheet about the flu.
